macosx: Refactor and fix VLCLibraryInformationPanel

In master, our implementation of the VLCLibraryInformationPanel has a very brittle layout which breaks almost immediately upon use. The code is also messy and difficult to read

This MR refactors the VLCLibraryInformationPanel to resolve both of these issues
