Fix ARM-64 simulation

This fixes compilation for the ARM-64 simulators on modern Macs by tweaking the xcodeproj, updating AppCenter and updating VLCMediaLibraryKit. Marking as draft because this depends on VLCMediaLibraryKit!15 (merged) to be merged. Fixes #1107 (closed).
